It’s now March and the finally the snow is melting and the sun is shining.
This means – MAPLE SYRUP time.
My parents took me to the sugar bush (shack?), my entire childhood and now it’s my turn to take my children to eat pancakes and tour the maple trees.
I have been taking them to Mountsberg Conservation Area since they were little. Every year..without fail.
We go early in the morning to avoid the lineups (for the pancakes of course). I truly think it’s due to these pancakes that we make the annual visit. (there I go again, obsesssing about food..HA)
I enjoy it more than they do. (I am sure of this). However everyone at the end of the day (i.e when they finish the pancakes), has a great time. I have my photos, our bellies are full and it’s great to spend some time outdoors, outside of the city.

My dad took me every year, sometimes twice in a season. He goes at least 3 times or more. He knows the minute the sap starts to run and his favourite is the light that usually is the first run off. At 84 he still goes yearly which is great. My favourite is the medium as I find there is more of a maple taste in the syrup. I can’t do the pancakes and sausages anymore due to my allergies but we still go so I can get my huge gallon or more of maple syrup to last me the year. It is liquid gold at the price they sell it for, but so worth it!
