Dinner was a hit. If I say so myself…a real winner. Now that the dishes are done, I have a few minutes to share with you three favorite recipes from that meal. I have to give credit to www.tastespotting.com coz that’s where it all starts. In just of a click of a button, I am instantly inspired.

Strawberry Gazpacho:
Just the right amount of sweet, heat, and tartness. I also loved the texture and presentation.

Chimpanze Cheesecake.
Many thanks to my good friend Karen who shared this recipe with me, many years ago. I like this recipe as it doesn’t require a ton of sugar (sorry @actsofsweetness).
Crust
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
3/4 cup sugar
Mix the ingredients in a bowl until evenly blended. Press mixture into the bottom of a 9 inch springform mold. Smooth bottom to an even thickness. Bake 10 minutes in a preheated 350 degree oven. COOL before filling.
Filling
1 lb cream cheese (2 -250 gram blocks)
3/4 cup sugar
2 tsp lemon juice
4 large eggs
1 cup sour cream (not low fat)
1 cup mashed bananas (2-3 medium)
In a large mixing bowl, beat the cream cheese with the sugar and lemon juice. Add eggs, ONE AT A TIME, blending well after each addition. Stir in sour cream and mashed bananas. Blend well.
Pour into a prepared crust and bake one hour in a preheated 350 degree oven. Cool in oven with door propped open till cake is room temperature. (I skip this step. Don’t know why).
Before Serving: slice a banana and decorate the top of the cake. Drizzle with chocolate syrup. (optional)
The best part of the meal was sharing it with my family, and good friends. Not to mention, that I scored the Mr. Coffee Ice Tea Maker as a dinner gift.
Wonder what I will make next time I entertain? Time will tell….
