During the week…I cook simple stuff. We have “mexican” nite (i.e tortillas). We have “italian nite” (i.e pasta), We have sushi nite (i.e I was downtown and there was a special between 2 and 6 for take out). We have “Canadian nite” (i.e veggie burgers and fries). We have “healthy nite” (i.e veggies on rice). There is always fruit for dessert and water on the table. Those dinners are pretty easy to whip up and I can cope. (operative word).
Then…there are occasions where I “entertain”.
This takes some planning. Probably three days.
Day One: Menu Plan
This means, that I surf the internet for recipes. Two websites in particular inspire me.

I develop a menu. Soup, Salad, Main Course ,Three Sides, Dessert.
I then make a list and head to the grocery store. Hopefully I find all the ingredients in one place. Sometimes this doesnt happen and I find myself going to WAY too many places to find specific ingredients.
Day Two: Prepare.
This means..I buy the flowers, set the table, do the flower arrangements, and make anything I can in advance. Sometimes I will even prep the veggies. Tupperware comes in handy for this. I will have little containers of chopped herbs, another container of chopped garlic, etc.
Day Three: Panic..I mean, Assemble.
This means, I cook like a mad women. But don’t forget everything is prepped. I once had a friend come over to watch me make a full meal in 2 hours (clean up not included).
What am I serving this week? We are having 12 for dinner…7 adults, 5 kids.

My new favourite way to entertain is to host a brunch. It’s so much easier than cooking an elaborate dinner. I have some amazing recipes for baked french toast and quiche, both are made the night before. I also love serving a huge basked full of pumpernickel bread, challah, bagels, flat breads, and pitas, to accompany tuna, egg, hummus, lox and cream cheese.
