Sparsely “sauced” with pesto and dabbed with softened bits of goat cheese, the pizza is a great way to introduce your kids to new flavours in a form they will recognize and embrace. Using canned beets in this recipe cuts out the time-consuming task of roasting beets… making the Beet, Pesto and Goat Cheese Pizza a win-win recipe for dinner (or lunch).

5 drained small whole canned beets
1 President’s Choice Thin Pizza Crust
1/4 cup President’s Choice black label Pesto
3/4 cup shredded mozzarella cheese
2/3 cup President’s Choice Market Trio Tomatoes, sliced in thirds if large (halved if small)
1/3 cup President’s Choice Soft Unripened Goat’s Milk Cheese
1/4 cup thinly sliced red onion
1/4 lightly packed fresh basil leaves
- Preheat oven to 450°F (230°C). Slice beets 1/8-inch (3 mm) thick and place on paper towel to drain for 5 minutes.
- Place pizza crust on pizza peel or back of a baking sheet. Spread pesto over crust leaving 1/2-inch (1 cm) border bare. Top with mozzarella, beets and tomatoes. Crumble goat cheese over top. Scatter onions over top.
- Transfer pizza directly to middle rack of oven. Bake for 8 to 10 minutes or until crust is golden brown and crisp. Remove pizza using pizza peel or transfer to cutting board. Top with basil just before serving. Cut into six wedges.
