UrbanKitchen: Beet, Pesto & Goat Cheese Pizza

Looking for a new twist on a classic recipe? President’s Choice has the perfect go-to dinner idea sure to please the whole family.

Sparsely “sauced” with pesto and dabbed with softened bits of goat cheese, the pizza is a great way to introduce your kids to new flavours in a form they will recognize and embrace. Using canned beets in this recipe cuts out the time-consuming task of roasting beets… making the Beet, Pesto and Goat Cheese Pizza a win-win recipe for dinner (or lunch).

Serves: 6

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients

5 drained small whole canned beets

1 President’s Choice Thin Pizza Crust

1/4 cup President’s Choice black label Pesto

3/4 cup shredded mozzarella cheese

2/3 cup President’s Choice Market Trio Tomatoes, sliced in thirds if large (halved if small)

1/3 cup President’s Choice Soft Unripened Goat’s Milk Cheese

1/4 cup thinly sliced red onion

1/4 lightly packed fresh basil leaves

Directions

  1. Preheat oven to 450°F (230°C). Slice beets 1/8-inch (3 mm) thick and place on paper towel to drain for 5 minutes.
  2. Place pizza crust on pizza peel or back of a baking sheet. Spread pesto over crust leaving 1/2-inch (1 cm) border bare. Top with mozzarella, beets and tomatoes. Crumble goat cheese over top. Scatter onions over top.
  3. Transfer pizza directly to middle rack of oven. Bake for 8 to 10 minutes or until crust is golden brown and crisp. Remove pizza using pizza peel or transfer to cutting board. Top with basil just before serving. Cut into six wedges.

Per serving: 230 calories, fat 12 g, sodium 500 mg, carbohydrate 23 g, fibre 2 g, protein 9 g
