I bake muffins and cookies. That’s it.
I do not bake cakes, squares, cupcakes, bars or even brownies. Frankly, baking kinda scares me.
So complicated. So exact!!
On the rare occasion I have made fancier things like sticky rice pudding with mango, or chocolate pudding from scratch, or tiramisu a few times!!
But I really enjoy making muffins, especially banana muffins. My daughter now helps me to gather the ingredients and she knows the beater has her name on it afterwards. It really is a fun activity to do together.
Here is the official recipe:
BEST EVER BANANA MUFFINS
2 cups mashed bananas (about 5 – the ones that are yellow with brown spots that no one will eat anymore)
3/4 granulated sugar
1 egg
1/3 cup melted butter
1 tsp. baking soda
1 tsp baking powder
1/4 tsp salt
1 1/2 cups all purpouse flour
* chocolate chips optional
In a large bowl, mash bananas. Stir in sugar and egg. Add melted butter.
Stir in baking soda, baking powder, salt and flour to make a thick batter.
Fill each cup of a 12 cup muffin tin about three quarters full. Bake in a 375F oven for 20 minutes until a skewer insterted in the middle of a muffin cups out clean.

I think I’ll try this with my 15 year old. She needs to start learning how to cook and bake. Easy baking would be more appealing to get her started on what hopefully will be a lifetime of healthy eating and cooking.

may i also add that when i bake i throw in some ground flaxseed as well for extra nutritional benefit…
