Anyone who knows me well, is very aware that I hate cooking. In fact I really don’t enjoy food much at all. I know it’s terrible, but seriously I really don’t understand how people can get so excited about food. To me, eating is just another task that takes up precious time.
Of course my children are completely unaware of this bizarre side of me, and I plan to keep it that way so please be kind and shhhhhhhhhh keep this between ourselves. I don’t want them thinking that food is not important or a bad thing – we are all aware that children are self concious as it is and so we don’t need to add in the whole food issue.
So back to my cooking issue. I won’t lie – I have no objection to making an entire dinner – from a box. Yes I “cook” packaged food and use the microwave (GASP!). I have no idea how some mothers are able to cook these elabrate meals and from scratch no less. I really wish I could and I am really jealous, but again its the whole lack of desire here that is kind of holding me back. However, that is about to change!
One of my new years resolutions was to try to cook more for my children. So I have decided that I am going to try a new meal once a week and report back to you. I will write a post each week on what type of meal I attempted to cook, how badly (or not) I burnt a bit, half or the whole meal, and of course whether or not my children attempted to eat it and if they hated it or loved it.
Please feel free to send me any recipes or family meals you think I may want to try and I promise I will try not to burn it or destroy it:)

Good choice for me is customized meal plans from http://perfectdietplan.org/. I recently got vegetarian one. Works well for me. I’ve even lost a couple of pounds!

since i’m a pampered chef consultant there are a lot of p.c. items in this recipe but i’ll try to edit it for what most people have in the kitchen 🙂 my girls (the ones who won’t eat a baked potato) will chow these puppies down!
Grilled Chicken & Garden-Fresh Basil Wraps
Recipe
4 boneless, skinless chicken breasts (5–6 oz/150–175 g each)
1 tbsp (15 mL) canola oil
2 tbsp (30 mL) Citrus & Basil Rub (you can use just dried basil)
4 small vine-ripened tomatoes
1/4 tsp (1 mL) each salt and coarsely ground black pepper
4 oz (125 g) whole milk mozzarella cheese
1 oz (30 g) Parmesan cheese
1 cup (250 mL) loosely packed fresh basil leaves plus 6 large basil leaves, divided
2/3 cup (150 mL) light mayonnaise
1 garlic clove, peeled
3 (11-in./28-cm) flour tortillas (see Cook’s Tip)
Sliced red onions (optional)
*you can also grill the chicken instead of putting it in the microwave*
Brush chicken with oil using Chef’s Silicone Basting Brush; sprinkle with rub. Arrange chicken in Small Ridged Baker; cover with Parchment Paper. Microwave on HIGH 5–6 minutes or until internal temperature reaches 165°F (74°C). Remove chicken from baker to clean Cutting Board; cool 5 minutes. Dice chicken into 1/2-in. (1-cm) pieces with Chef’s Knife. *you can also grill the chicken
Meanwhile, slice tomatoes thinly. Blot excess moisture from tomatoes with paper towels. Sprinkle tomato slices with salt and black pepper; set aside. Grate mozzarella cheese; set aside. Grate Parmesan cheese. Combine 1 cup (250 mL) of the basil, mayonnaise and garlic in Manual Food Processor; *or regular food processor or just chop it all by hand* cover and pump handle until basil is finely chopped. Combine basil mixture, Parmesan cheese and chicken in Classic Batter Bowl *or large mixing bowl* ; stir to coat.
To assemble wraps, place three tomato slices widthwise over center of one tortilla, overlapping as necessary. Top with one-third of the chicken mixture; two basil leaves; three additional tomato slices; red onions, if using; and one-third of the mozzarella cheese. Fold in sides of tortilla and roll up tightly burrito style. Repeat two times for a total of three wraps.
Preheat Grill Pan and Grill Press over medium-low heat 5 minutes. Place wraps in pan; top with Grill Press and cook 3–4 minutes per side or until grill marks appear. Remove wraps from pan; cut in half on a bias and serve immediately.
Yield: 6 servings
Per serving: (1/2 wrap): Calories 390, Total Fat 19 g, Saturated Fat 6 g, Cholesterol 90 mg, Sodium 1070 mg, Carbohydrate 21 g, Fiber 1 g, Protein 32 g
Cook’s Tip: Part-skim mozzarella cheese can be substituted for the whole milk mozzarella cheese, if desired.
Warming the tortillas will make them easier to roll up. To warm tortillas, place them between paper towels and microwave on HIGH 30-45 seconds or until warm.
