I was contacted by the one and only Greta Podleski, co-author (with her sister, Janet) of the Looneyspoons Cookbooks, and she asked if I would be interested in reviewing a copy of their latest cookbook, “The Looneyspoons Collection.”

With the seasons (supposedly…we got snowed on again today, so much for spring break) changing, I find myself shelving my recipes for the same old tired roasts and casseroles and I delve into new, fresh finds that feel light and springy. I am always looking for inspiration for cooking and spend a lot of time scouring cooking blogs and Pinterest for recipe ideas, so I was really excited to have the chance to review “The Looneyspoons Collection” cookbook. It arrived on my doorstep and from page one, it was a delight to pore over. The pages are all full-colour, a nice heavy weight of paper, and are filled with beautiful photos and lots of fun facts plastered all over the pages. It almost reads like a coffee table book or high-quality magazine and is just really fun to read.
I made their “FULLafel Patties” recipe and it was fantastic! It was really easy, it required ingredients that I already had in my pantry and spice rack, and the kids and husband gobbled it up in a flash. I will totally make them again, but in a double batch so we actually have leftovers!
The cookbook is a really great addition to anyone’s collection because it has such a great variety of recipes: sides, salads, main dishes and lots of vegetarian options, all with a focus on whole foods and healthy ingredients.

Our favourite summer meal is BBQ’d boneless/skinless chicken breasts. Even both my picky children love this! With that, I love sliced potatoes covered in fresh herbs and lightly swiped with butter done in a foil packet on the bbq. I also like to have veggie kabobs or a fresh salad on the side. We try to bbq as long as possible – when it’s too cold for me to stand out there, I send out hubby lol

My favourite summer dish is tomato bocconcini salad! In the summer time I use the cherry tomatoes and basil from my garden, balsamic vinegar and fresh bocconcini (baby mozzarella balls) from the store. Delish! I’m drooling just thinking of it!!!

Forgot the recipe on the first post. This is an easy and delicious salad. Cut up avocado, some celery stalks and use juice from a lime. Mix and Add sea salt and you are finished!
