So last night, we were maybe 20 minutes from having supper ready and The Girl said, really forlornly "Are you going to make the brown and wild rice mix that I bought with my allowance?"
And then I died right there of adorableness because I have a child who buys fancy rice with her ALLOWANCE. But I was telling her – and feeling rather bad about it – that we couldn’t have the rice with our supper because brown rice takes about an hour to cook, when my husband got the bright idea to go check out the book that comes with our pressure cooker. Ah ha!
"It says that it should cook the rice in 12 minutes," my husband said. So we set to work browning onions and garlic and carrots:

And voila, in time for supper – we had brown rice!
TWELVE MINUTES. That’s CRAZY!
We really prefer to eat brown rice as a family, and by "we" I mean "me", of course. My husband prefers to eat white rice, and tends to sing forlorn little ditties about hippy wives, which are all very well and good but hurry up and eat before I am LATE FOR MY MACRAME CLASS. Anyhow, my children all obligingly love brown rice too, and it’s all great as I remember to put the rice on an hour before supper. Which – do I even have to say this? I have three kids. How much ability to remember anything do I still have? – doesn’t happen all that often. So it’s great to have a speedy way to get it on the table, because I just can’t hear that Hippy Wife song often enough, REALLY. And the rice was GOOD, too.
And because I am so dedicated to Health and Wellness – this is what I made for dessert:

That dessert LOOKS rather fancy but isn’t hard to make (*couch* brownie mix *cough*) and here’s the recipe, should you want to have your children chase dessert around like a couple of skinny vultures. I made ours gluten-free, which made The Baby say "That dessert is for ME?" with such a note of shocked excitement in her voice that I practically WEPT. Geez, kid.

Sure, I’d LOVE to have a pressure cooker! Sometimes I get really busy with freelance work, and it’s a juggling act to put dinner on the table for my family and finish my rush writing jobs. This way, I can throw everything in the cooker and have a fab meal – and not have to babysit the cooker. Hey, it’s bad enough I have to ‘babysit’ my clients!

I have always been afraid of pressure cookers. When I was young, my mom used to use one on occasion, and the sound it made terrified me. I always thought it would explode one day. Hi, I would love to have a pressure cooker! This year I planted a garden and it is amazing! A rice cooker can be a godsend! When I went away with my Auntie in her motor home, she used her rice cooker to cook everything. She boiled potatoes, made scrambled eggs, packaged scalloped potatoes, and most impressive was a small roast of beef with potatoes and carrots from frozen to done in under 2 hours. If you think brown rice cooked in 12 minutes is impressive then try a roast dinner in under 2 hours, with all of the trimmings. Amazing!!!!

Wow, that’s a really cool pressure cooker. My mom used to always use it to make dinners when I was younger but she never got around to teaching me useful things like making brown rice in less than 20 mins (then again we were a very white rice in a rice cooker family). Nowadays my entire family (3 generations!) eats brown rice. Would love to have a pressure cooker in our family (the rest of my family lives on the east coast, I’m on the west) so popping over to borrow their pressure cooker would be a bit difficult.

My mother had a pressure cooker and used it a lot – yes, the old heavy one that you had to “lock” the top on by lining it up just “so” then twisting then put the wobbly whistling thing on the top. I remember one time she didn’t get something right and the whistler flew up into the air (nearly hit the ceiling) and the lid blew off as well. The pressure cooker got put away after that and gathered dust. I have no idea what happened to it. I would love to be able to win this and see how Cuisinart has redesigned an old standard and be able to use one because the food that used to come out of my mother’s and my aunt’s was definitely delicious !

wow how much have pressure cookers changed. My parents had one when I was growing up, but it was the big, heavy pot that had a whistling valve on the top. We used to make white rice or the ever dreaded stew in it (the only part I would eat was the dough boys, teehee). My mother has a thing for brown rice. But without a pressure cooker she has to soak it in water overnight before cooking it in our rice cooker. This method almost always produces chewy rice. I’m not a fan of chewy rice and for that matter brown rice. The pressure cooker and the recipe look great as a solution to our family’s disharmony over this matter.

I have always liked the “thought” of brown rice for dinner, but most of the time I don’t have the pre-planning ability to get it on the table (due to the fact that most of my brain seems to have been sucked out when I gave birth!). Woohoo – anything to make healthy meals fast sounds good to me! And I bought the brownie mix and have a ‘do not touch’ label on the strawberries in the fridge. I don’t know if my ‘pizza’ will look as wonderful as yours, but I’m going to give it a try! Thanks for the great ideas.

A pressure cooker always seemed a formidable kitchen tool however I was raised with many cautionary tales about pressure cookers exploding and whatever else they do ..
However I have over time been reconsidering my lack of fortitude with respect to tackling new.. for me and old for others .. kitchen aids and I would pleased to ‘win’ one to use in our old farmhouse where we cook brown rice and other delightful root vegetables.
That child is destined for some career that requires good taste .. a chef perhaps?

Oh, oh! My poor family sadly lacks for anything that requires long, slow cooking, so a pressure cooker would be a saving grace. You could single-handidly improve the dietary consumption of my boys (do I sound desperate enough yet?).
And if you can believe it, my son would pick off all the fruit from the top of your dessert and leave the gooey brownie crust for the dog (or mummy)! His preference works well for both of us!

Well my kids have never bought their own rice :), but we do have a rule that if they want to purchase something at the grocery store that I don’t want to buy, but they really want to have it (stuff that usually falls into the category of junk food like pizza rolls) – they can use their own money to buy it.
I love rice – all kinds. Get some black rice to try…

I’m definitely interested – it would be so nice to be able to cook things more quickly, and, even more importantly for me, to have a way to cook rice in the summer which wouldn’t involve burning it (we have a wood stove in the winter which works fine, but we only have propane in the summer).
It’s nice to see a draw for Canadians, too.

Oooh. I want one. Of those brownie pizzas AND an electronic pressure cooker. Even though I’m deathly afraid of pressure cookers because my mother insists they are ticking time bombs that could ricochet across the room at a moment’s notice.
My mother watches a lot of Looney Tunes cartoons, I fear.
I don’t make wild rice around my husband as he feels compelled to explain over and over again that wild rice is not in the same genus as REAL rice, and while both are grasses blah blah blah. EAT YOUR CARBS AND SHUT UP ABOUT IT.
Now I have to get back to frantically cleaning the house in anticipation of my in-laws visit.

Brown rice in 12 minutes…makes me want to get one of my own. Until I remember I have nowhere to put it and it would have to hide in the basement with the juicer and the food processor and the electric skill and the rest.

But … I do have to tell you that I have an OOOOLD Fashioned pressure cooker. There are no buttons to push and no cords to plug in. It is going on at least 40 years old. It was my uncle’s, and when he died in 1983, it became mine. Yay!!! I have to put it on the stove and then listen to that cozy, memory-inducing psssssssst of the little thingamajig on the top.
I love it. But I have never tried rice and so now … I will. I have the same plan ahead problem as you do, except not the small children to use as an excuse.

I made a similar recipe last year and my brownie melted all over the sides of the pan, dripping into the bottom of my oven. It was a thin (crunch, very crunchy) crust dessert pizza, but still pretty good.
