I Had the Weirdest Dream…

December 11, 2007 by Jen

…you know you’re weird when you start dreaming about baking!

Either that or you’re on a crazy restrictive fad diet…

Call it the latter for me last week. Anyway, other than a good jolt in the weight loss department, the baking dream inspired a really good dessert!

Okay. Here’s how it went.

I’m in my kitchen, only it’s not really my kitchen…it’s like a weird, old-fashioned yet also commercial kitchen. But in my dream, I know it’s my kitchen, ya know? Anyway, I’m making a cake…from a mix (the only way I ever make cakes, by the way, so that part at least was realistic) and instead of adding eggs, oil and water, I add eggs, oil and Baileys.

Honestly, I actually did dream that.

So, I woke up, with zero recollection of the dream. Later in the day when I opened up my pantry cupboard to get a box of crackers, I saw a Duncan Hines devil’s food cake mix. And it hit me. I remembered the dream. Now, I don’t know if I read somewhere that you could replace the liquid in a recipe with Baileys, and it was lodged in my subconscious and came out in the form of a dream, or whether I had a flash of somnolent culinary inspiration, but I decided to give it a try.

I will admit to a moment of trepidation as I poured a full cup-and-a-half of Baileys into the cake mix. I mean, if it didn’t work, what a waste of Baileys! But I believed in my vision, and I persevered. It smelled absolutely heavenly as it baked, and just look at the result:

Lovely! It looked great and tasted even better (with a little icing drizzled on top):

Perfect partner for a cup of coffee.

I would definitely do this again!
