I think I have mentioned in the past how I really hate cooking. I know, hard to believe that a mom of 8 would not be into cooking. I have just never been a big eater, don’t really like food, nor do I get overly excited over eating a great meal. We need to keep this bit of information top secret because I cannot let my kiddies know – not really a good example on eating habits. I am no stranger to boxed, pre-made packaged food, and yes my children do get take-out – not a lot but often (yes there is a difference in the two).
That all said, please take note that where I live the past few days has been disgusting. I enjoy the heat of summer, but it has been hot, humid, sticky and making my allergies go bonkers. I have had a consistent sinus headache for a week. Awful.
So yesterday after the children came home from school, they parked their bikes on the driveway, dropped their knapsacks on the floor in the middle of the front hallway, and I think they must have had a contest of who could flip off their shoes the farthest because I had shoes all over the hallway and into the kitchen. When they were all done created a mess and chaos I then started being bombarded with the question of “what’s for dinner?”
Really? Cook in this heat? No way, and BBQ was out because I was out of propane. I pondered over what to make, then went over to the grocery store and bought some buns deli meat, a fruit tray, and a veggie tray and here is what they had:
Simple, yet refreshing, and almost hitting all the food groups.

Oh dude, I’m in the same hell at the moment. I think I’m making chicken salad and crudite with popsicles for dessert. we’ll ALL PERISH if I try to turn the oven on… for sure!!
