Homemade Granola Bars

Looking for a delicious after school snack?  Here’s an easy recipe that
is good to eat and fun to make with your kids. 

This recipe is very versatile so feel free to make
substitutions.  My preference is to double
up the raisins and omit the chocolate chips.  I’m sure many of you
out there are cringing right now.  Over the years I was surprised to discovered that many
people have a great dislike of raisins.  Children often fall into this
group.  So if this is true for your kids make their granola bars
chocolate chips only.  There are also many ways to increase the
healthiness of these granola bars.  Consider replacing the all-purpose
flour with whole wheat, and substituting half the oil for applesauce. 

These
bars are sure to please so try them soon!


Ingredients

2 cups rolled oats
3/4 cup all purpose flour
1/2 tsp salt
3/4 cup brown sugar
2 tsp cinnamon
1/2 cup wheat germ
2 eggs
1/2 cup vegetable oil
1/2 cup honey
2 tsp vanilla
1/2 cup raisins (optional)
1/4 cup chocolate chips

Bake at 350 degrees Fahrenheit in a 9×13 pan.

1. In a large bowl mix the dry ingredients together – oats, flour, salt, brown sugar, cinnamon, and wheat germ.
2. In a small bowl mix the wet ingredients – oil, honey, eggs, and vanilla.
3.  Add the wet ingredients to the dry mixture.  Mix until well combined.
4. Add the raisin and chocolate chips.  If you are not using the raisins increase the chocolate chips to 3/4 cups.
5.  Press mixture into a 9×13 pan lined with parchment paper.  The mixture will only fill 3/4 of the pan.
6. Bake at 350 degrees Fahrenheit for 20 minutes.
7. Cut into bars while still warm.
