Healthy (Sort-of) Caesar Salad

Tomorrow is Father’s Day.  Which means in kitchens all across Canada, wives, mothers, and daughters will be cooking meals for husbands, fathers, and sons. 
Personally speaking, I have the privilege of showing my step-father (or Dad, as I’ve called and felt about him for the last 30 years) how much I love him by making him brunch.  But what do you make for the man who’s eaten everything?  And by that, I mean a man who as a football player in the 50’s and 60’s, thought that “healthy eating” meant consuming the largest, fattiest steak you could find before and after each game. 
While Dad’s football days are long gone, sadly, his love of steak dinners is not.  Along with all of the other unhealthiest foods he can find.  Luckily, I have this AWESOME recipe for a healthy Caesar salad that I picked up years ago while watching my first cooking show: What’s For Dinner with the late, great Ken Kostic. The good news? My Dad loves it…along with all of my other family members who have raved about it for years.
What I love about this salad isn’t just how delicious it is, but also how versatile it is.  It is healthy enough to serve to those who care and hearty enough to satisfy those who don’t.  It is perfect with steak (for Dad), brunch, or even my son’s favourite, chicken Caesar wraps.
Healthy (Sort-of) Caesar Salad 
(aka Caesar Salad for those of us who have moved past our “steakhouse in the ’70s” days)
Ingredients:
1/4 cup low fat plain yogurt (not Greek…its too thick for this recipe)
1/4 cup grated Parmesan cheese
1 tsp fresh lemon juice
2 tsp chopped garlic
1 tsp balsamic vinegar
1 tsp anchovy paste 
1 tbsp worcestershire sauce
a couple good turns of the fresh pepper mill & salt to taste
Directions:
1. Blend all of the above.  Seriously.  That’s it.
2. In a large bowl, toss with one head of washed and dried romaine lettuce, torn into bite-size pieces.  I also like to add in arugula and baby spinach.  Feel free to make it your own with your favourite veggies.
