I am the Queen of Breakfast Treats.
I’ve developed quite a fanbase in my own home for my homemade pancakes (plain or with chocolate chips, bananas, blueberries or raspberries). Sometimes I get really creative…witness this past St.Patrick’s Day.
I have a following up at the cottage where I pull out my crepe pan and treat everyone to blueberry crepes at least once a summer. Sure, we all walk around with blue mouths for a morning, but it’s worth it (and my family is easily impressed…oohs and aaahs when I flip those crepes high in the air everytime!)
I have a new bow in my breakfast treat quiver. My parents gave me Williams-Sonoma’s Ebelskiver pan for my birthday recently, and making these stuffed pancakes is as fun as saying “ebelskiver”. They’re a traditional Danish pancake shaped like a sphere, and filled with yumminess.
Step one, make the pancake mix either from scratch (there’s a great recipe book with lots of variations, both sweet and savoury) and pour into the warmed buttered ebelskiver pan.
Step two, add your favourite filling. We’ve tried nutella, peanut butter, strawberry jam, blueberries and raspberry pie filling. They all work!
Step three (and this is the tricky part), carefully turn your ebelskivers using the long chopstick-like sticks provided.
Step four, bake for another minute or two, remove, sprinkle with icing sugar and get ready for the oohs and aaahs….
My kids love the Ebelskivers we’ve made (they taste like homemade timbits), and I really love that my reputation as Queen of the Breakfast Treats is spreading!
Ebelskiver pans, pancake mixes and recipe books are available at Williams-Sonoma online or in stores. They’d make a great hostess gift if you’re going to someone’s cottage for a weekend!
