Easy Summer Dish: Chick Pea Salad Extraordinaire (Chana Chaat)

Chickpea_Salad_003.jpgThe sun is shining, my kids are home, and I do not want to be in the kitchen more than I have to.  So, the result is a lot more barbeque, and a lot more meals that don’t require standing in front of a stove.  Our typical summer meals usually include some barbequed meat (preferable something spicy or tandoor-style, and always burgers!), a whole-wheat baguette, and a great salad.

This chick pea salad was a staple in my house growing up.  My mom used to whip it up as a brilliant side dish to whatever she was making and now I find myself doing the same.  Not only is it savoury and delicious (let me know if you agree!) but it’s also packed with protein, fibre and vitamin C.

1 can chick peas, rinsed and drained
1/2 red onion, chopped
green pepper chopped (all vegetables should be chopped small to match the size of the chick pea)
1 tomato, seeded and chopped
1 small cucumber, chopped
handful cilantro, chopped

dressing

1/4 cup olive oil
1/4 cup freshly squeezed lemon juice
splash of white vinegar (optional)
2 tbsp coriander power
2 tbsp cumin power
1/2 tsp cayenne pepper
2 crushed garlic cloves
salt and black pepper to taste

OPTIONAL:  For added spicy deliciousness, serve this salad dr
izzled with a sweet tamarind chutney and/or a spicy coriander chutney. Both are easily available in any Indian grocery store.

    I hope you enjoy it! FYI – you can make this with white beans too, and a black bean/corn combo is good too

    I was JUST trying to decide between chickpeas or white beans for salad options for my gluten-free man… chickpeas is is then! (Looks gorgeous, girlie!!)

    Amreen this salad looks delicious. I make a similar one all the time. Thanks so much for the tip to add chutney. This will definitely elevate the salad.
