Died & Gone to Heaven Ribs

Welcome to Chef Dad! I guess it’s no secret I like to cook and I’m a dad to 3 awesome kids. There’s nothing better than making dinner that all three kids love. It’s not an every day feat – but it’s certainly the goal. 

My kids are awesome supporters of me in the kitchen. There is rarely something I whip together that they won’t at least try – what more can you ask for?

For the inaugural Chef Dad post, I thought it would only be appropriate to put up my absolutely favourite recipe for all of you. In fact, it’s not just the favourite thing I make, it’s the best thing I’ve ever eaten. Hands down.

Died & Gone to Heaven Ribs After

Died & Gone to Heaven Beef Ribs

Serves: 4

Ingredients:

2 full slabs beef ribs

1/2 cup honey

1 cup premium apple juice

1 1/2 cups quality bbq sauce*

Dry Rub**

3/4 cup salt

1/4 cup seasoned salt

1 cup Sugar in the Raw

1/2 cup granulated brown sugar

1/2 cup chili powder

2 tablespoons coarse ground black pepper

1/2 tablespoon cayenne pepper

1 teaspoon ground sage

1 teaspoon ground thyme

* this recipe is all about the sauce. It has to be lip smackin’ good. These days I’m really digging this and this.

** the dry rub recipe will make much more than you’ll need. That’s ok, you’ll want to make these often. Simply store in a tupperware in your spice cabinet. It’ll last you the whole season.

Preparation:

  1. Tim the ribs. Rub each rack liberally with dry rub.
  2. Preheat grill on Low for indirect heat. Place the ribs away from the heat source and cook until the ribs are just caramelized, about 2 hours, flipping every 30 minutes.
  3. Preheat oven to 325 degrees F. Dump the ribs in a large foil pan with apple juice. Glaze with honey, and cover with foil. Place in oven for one hour.
  4. Preheat the grill to High for direct cooking. Throw the ribs back on the grill to sear, about 2 minutes per side. 
  5. Remove ribs from grill, cut into individual portions, brush liberally with bbq sauce. Enjoy!
