Country Pumpkin

Oh, September. Month of new beginnings, plenty of stress, tonnes of transitions and, most importantly, pumpkin muffins.

Things here are CRAZY busy, as they are for everyone else: school starting, apple harvest (we live on a farm, remember? I think I’ll see my husband in a couple months), my real estate career beginning yesterday, and three kids’ worth of activities and attitudes. I am tired. But I love fall. It’s my favourite season. I adore the colours of the changing leaves, the crispness in the air, the stick-to-your-ribs recipes that start to emerge again.
I am going to share with you the best, easiest recipe EVER. Everyone who tries it raves about, requests the recipe, then balks at how simple it is. So, here you go:
Pumpkin Muffins
1 Spice Cake Mix
1 Can Pumpkin
That’s it. You just toss those two things in a bowl, mix ’em up and bake at 325 for 18-22 minutes. (Don’t add the oil or eggs the cake mix box tells you to, just the mix and the pumpkin.) They are the perfect texture and taste even better if you slather a couple inches of cream cheese icing on top. DO IT.
