Potato & Leek Pizza
Adapted from Foodland Ontario
Couch to Table in: 45 Minutes
Serves: 4
Ingredients:
3 tbsp olive oil
5 cloves garlic, peeled
5 button mushrooms
2 leeks (white and pale green part only)
2 teaspoons chopped rosemary

3/4 teaspoon salt
1/2 teaspoon pepper
4 medium Yukon gold potatoes, scrubbed
3/5 lb prepared pizza dough (recipe below)
2 tablespoons grated Parmesan cheese
2-4 ounces each Cheddar and Mozzarella cheese
1/2 teaspoon pepper
4 medium Yukon gold potatoes, scrubbed
3/5 lb prepared pizza dough (recipe below)
2 tablespoons grated Parmesan cheese
2-4 ounces each Cheddar and Mozzarella cheese
Preparation:
- Shred the cheeses to produce 1/2 cup each of shredded Cheddar (medium shred) and Mozzarella (fine shred).
- In the 11-cup bowl process the garlic, mushrooms, and leeks using the slicing disc set on 3mm thickness.
- In the 14-cup bowl process the potatoes using the slicing disc on the 1mm setting.
- In large pan, heat oil over medium-low heat; cook garlic, mushrooms, leeks, rosemary, salt and pepper, stirring, for 6 to 8 minutes or until mushrooms have released their liquid and leeks are tender. Toss potatoes in leek mixture to coat.
- Press dough onto 12 to 14-inch pizza pan; sprinkle with Parmesan.
Top with potato slices with mushrooms and leeks in overlapping concentric circles.
Sprinkle with Cheddar and Mozzarella. - Bake in 450° F oven for 20 to 30 minutes or until crust is crisp and potatoes are tender.
Pizza Dough
Adapted from Cuisinart
Ingredients:
1 package active dry yeast
1 teaspoon granulated sugar
2/3 cup warm water
1 2/3 cups unbleached, all-purpose flour
3/4 teaspoons table salt
3/4 teaspoon extra virgin olive oil
Preparation:
- In a 2-cup liquid measure, dissolve yeast and sugar in warm water. Let stand until foamy, about 3 to 5 minutes.
- Insert metal blade in work bowl and add flour and salt.
With machine running, pour liquid through small feed tube as fast as flour absorbs it. - Process until dough cleans sides of work bowl and forms a ball. Then process for 30 seconds to knead dough. Dough may be slightly sticky.
- Coat dough evenly with olive oil; transfer to a plastic food storage bag and seal the top. Let rise in a warm place for about 45 minutes.
- Place dough on a lightly floured surface and punch down. Roll into desired crust sizes. Makes ¾ pound dough.

Veg – I need help chopping veggies, alot of them. My daughter and I are both on very restricted diets – no gluten, dairy,soy, egg or alot of nuts (or honey for me) and we eat ALOT of veggies, I in particular eat alot of salads for lunch, baked root veggie salads are my fav thing right now – they take alot of time to make. I’ve never owned such a machine – think about owning one every time I have to chop garlic or vegetables in large quantities for soups and sauces. So much work!Carrots and celery are my least favourite – awkward.

I need help chopping onions, garlic. I also have a scary, cheap mandolin slicer which is getting dull and dangerous and I really should get rid of it. I like dehydrating fruits and veggies and this involves slicing them thinly before drying them so this processor would be very useful. I also bake bread daily and I am amazed you can mix dough in it.

I would LOVE such a Cuisinart!! Our first was a hand-me-down also… then before our first child was born, we got a brand new version as a gift (to help making baby food and stuff) but it is a huge, heavy machine with all the discs and blades as you mentioned… I don’t lug it out very often. I’d use it for just about everything, I reckon!

I like chunky vegetable soups, but my kids seem to prefer them pureed. This contraption would do the trick. Seems to have fewer parts to wash — the amount of cleanup involved with our current older model Cuisinart disincents us from using it regularly.

As a mom to three very athletic boys two of them just hitting puberty its more and more important for me to feed them home cooked well rounded meals and that in my house means disguising vegetables as best as I can. I would use the Quisinart Elite Food Processor to help chop all of those vegetables nice and small to mask them in the homemade sauce or chicken pot pies that I have been making more of, hoping to keep their hunger at bay for more than an hour. Help a gal out 😀
