One thing I’ve really wanted to add to our traditions at Christmastime is baking. I remember vividly my mum making tins of shortbread and plates of rumballs every Christmas (I also remember wondering how many rumballs I’d need to eat to get a buzz)
I wanted to create memories like that for my kids (minus the wanting a rum buzz), but gluten and dairy free baking can be tricky. You see…gluten and dairy free can be…well…not good. The cakes are heavy and dense. The cookies can be dry and crumbly.

I was determined to be a “holiday baker”. For my kids, of course.
I found a holiday shaped whoopie pie pan and thought – that’s it! Whoopie Pies! I can mask the horrible gfcf cake with a glob of icing! That’ll be my thing. What my kids remember! Whoopie Pies at Christmas…

Our little cake stockings, trees and gingerbread boys would stay just that – cakes. To heck with pies…I don’t like pie anyways. Besides – our babycakes turned out way cuter! There’s also another bonus – because they are so thin they actually don’t have the heavy, dense texture that the cake and cupcakes normally have.
So without further adieu, I would like to introduce you to our family’s new holiday tradition. Babycakes:

Shortbreads are the main staple in our Christmas baking. Problem=I eat them all.

Ahhh, we are GF/CF as well and Living Without (the magazine) is my bible – they have some great Christmas recipies including some cookies and cakes that acutally taste good! We currently have some short bread on the go that could fool a “reagular” food person – they are GOOD! expensive but good! Look them up – you will like what you see 🙂 happy baking, and Merry Christmas. your Babycakes look great by the way.
