Last summer, we were invited to our friends’ cottage for dinner and while the cottage was beautiful, the weather wonderful, and the company incredible, when I think back on that evening , one thing sticks out in my mind: the meal. The host had made us one of the most unbelievable meals I have ever eaten. It was nothing fancy, just steaks and this simple salad of peaches and bocconcini cheese, but it rocked.
Fast forward a year and once again, we were invited up to our friends’ cottage. And once again, we had such a fun evening. While we did have steak, sadly, the peach salad did not make a repeat performance. When we got home, I decided to take matters into my own hands. How hard could it be? I was right. It wasn’t hard at all and it was delicious.
Peaches and Cheese Salad is the perfect summer salad, especially for barbecues and parties. The peaches are at their peak, it takes minutes to make, looks beautiful, does not need to be chilled, and most of all, tastes amazing.
Grilled Peaches n Cheese Salad
4 peaches, cut into eight sections and then cut each section in half
1 cup bocconcini cheese cut into bite-sized pieces (I used pearl-sized)
1 tbsp + 1 tsp olive oil
handful fresh basil leaves, roughly torn
2 tsp good quality balsamic vinegar
pinch of salt
Directions
1. Preheat the barbecue to medium
2. Coat the peaches with 1 tsp of the olive oil and grill over medium until getting golden but not mushy. If you don’t have a vegetable grill pan (like me) put your peaches on tin foil with holes poked in it.
3. While the peaches are grilling, toss the cheese, olive oil and basil in a large bowl
4. Remove the peaches from the grill, let cool for JUST a minute and then toss with the cheese.
5. Let rest for a couple minutes for the flavours to come together, then adjust the seasoning (salt), and then toss again. Drizzle with the balsamic and serve.
