No Hassle No Bakes

If I’ve said it once, I’ve said it a thousand times. I am a complete mess in the kitchen. Generally speaking I don’t cook at all. Every so often though I get a wild hair and (attempt to) bake something. Most days my idea of baking is a box brownie or cake mix, occasionally I do the refrigerated break apart cookies. There is one recipe though, one that doesn’t come from a mix, that I have ingredients for at all times. It is my go to cookie recipe for when I just need something sweet. I like them because they are easy, have only a few ingredients and even when they don’t turn out just right they are still pretty damn good. Chocolate oatmeal no bake cookies. 

Ingredients:
1/2 cup butter
1/2 cup milk
1/2 tsp vanilla
2 cups sugar
1/2 cup cocoa*
1/2 cup peanut butter
3 cups quick oats

In the microwave or on the stove melt the butter, milk, sugar, cocoa, vanilla and peanut butter, it should come to a boil.**

Mix with quick oats.

Drop onto wax paper and let cool.

*I have seen this recipe include amounts from 3 tbs to 1/2 cup, it really just depends on how chocolately you want them. 
**some people will add the peanut butter to the melty mixture but some prefer to leave it out and let the boiling mixture melt it while stirring with the oats.
