UrbanKitchen: Olive, Chickpea And Avocado Hummus

Who doesn’t love hummus? I mean really, who? If there is such a person out there, I have yet to meet them. It is the perfect snack, makes a great appetizer and is the perfect thing to bring along to a party or event. And wit hthis twist on a fan favourite, you’ll never look at hummus the same again. What’s the secret? Just add olives!

We turned to the folks at Sardo Foods, the olive experts, to help us add a little sophistication to our hummus. “Olives can be as simple or as extravagant as you desire. For those looking for something gourmet for the palate, we have created an array of recipes to help expand your culinary horizon,” said Desiree Sardo,
head of communications and public relations of Sardo Foods.

So if you love olives and avocados, then you are going to fall head over heels in love with this twist on classic hummus.

Take your humus to the next level with this incredibly easy and delicious recipe.

Ingredients 

1 ½ cups cooked chickpeas
1 avocado peeled and pit removed
1 large garlic clove
1 ½ cups pitted green Sardo Foods Olives
2 tbsp. tahini
¼ cup fresh basil leaves (about 4 to 5)
1 tsp. sea salt
¼ cup EVOO
¼ cup water
2 tbsp. fresh squeezed lemon juice
⅛ tsp. black pepper

Directions

Place all ingredients in a food processor or high-speed blender and purée until fairly smooth.

Serve with assorted crackers and fresh veggies.

Tip: Don’t have a food processor or high-speed blender? Use a mortar and pestle or finely chop all the ingredients together.
