Borscht. It’s kind of an intimidating food. I picture a thick, Russian grandmother hunched over a kettle in the fireplace, ladling up steamy bowls of purple soup to a houseful of hungry souls, her recipe perfected after years of cooking it.
I dug up a few old beets from our garden, looked online for a recipe and gave it a go. It doesn’t get much healthier: beets, carrots, cabbage, onions, broth and that’s pretty much it. I used an immersion blender to make it nice and smooth and have been burping purple ever since. The kids even ate it!
Borscht. Fun to say, fun to eat.

I liked it. I can’t say I’m a Borscht expert, but it was pretty simple and tasty!
Also, the generous dollop of sour cream and a dash of dill are MANDATORY. 🙂
