Rosemary New Potatoes

Sometimes I’m so busy focusing on entrées I forget how easily a great side dish can turn a really good meal into a fantastic one.
These potatoes will capture everyone’s attention the minute they walk in the front door. The aroma of roasting garlic and rosemary will have everyone clambering for dinner to be served.
If you cook the potatoes until they just begin to brown, they will have great texture and be melt in your mouth delicious.

Rosemary New Potatoes 
Couch to Table in: 55 minutes 
Ingredients: 
2.5 pounds new potatoes, halved

4 tablespoons olive oil

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1 branch rosemary leaves 
2 cloves garlic, minced 
Preparation:

  1. Preheat oven to 400 degrees F.
    In a large bowl, toss all ingredients together until potatoes are lightly coated with olive oil. 
  2. Place potatoes on a baking pan, and bake for 25 minutes.
    Remove potatoes from oven and gently toss, turning the potatoes over as needed. 
  3. Bake for another 15-25 minutes or until potatoes are done roasting and are fork tender.

    Looks and sounds delish!! Will try this for sure. I do an easy variation of this idea using oil and a package of onion soup mix– simple, quick and yummy!!
