My Grandmother Would Not Be Impressed

I was really in the mood for some homemade chicken soup the other night for dinner. Seeing how I wasn’t up to cooking a start to finish soup over the course of a few hours I needed a quick hack.

Now, while I know my Grandmother would not approve – sometimes you’ve gotta do what you’ve gotta do. 
So – here’s what I whipped together. It hit the spot perfectly and I’ll definitely be using this “cheat” again!
Ingredients:
1 cup chicken stock
1 package chicken noodle soup (4 bowl size) 
2 carrot, peeled & sliced
2 stalks celery, sliced
1 cup frozen chicken or beef tortellini
1 slice deli roast chicken, 1 cm slice, diced
Preparation: 
  1. Bring the chicken broth to a boil, add in the sliced vegetables and simmer for 5 minutes.
  2. Add in the instant noodle soup, the water it calls for, and tortellini. Simmer for an additional 10 minutes.
  3. Add in the diced chicken, simmer for 5 more minutes then serve.

    that’s better than my poor girl straciatella (sp?)….lipton chicken noodle dry soup mix, stir in one or two eggs, serve with parmesean and fresh ground pepper. at least you have real protein and veg!
