My wife’s step mom has this incredible recipe for marinating grilled roasts. She makes it all the time for pork or beef tenderloin, but it would work just as great with any tender piece of meat. It’s incredibly rich in flavour and caramelizes so beautifully on the grill.
I like to grill beef until medium-rare, so the flavourful crust perfectly balances out the tender moist meat. Feel free to cook it to your liking, I’ve only gotten rave reviews on this one.

Ingredients:
1 beef or pork tenderloin, or other small tender roast
1 cup of port or dry red wine
2 cloves garlic, crushed
1/4 cup oil
Salt and pepper, to taste
1/4 cup soy sauce

Preparation:
- Pierce the meat all over with a fork.
- Mix marinade ingredients in a bowl, place meat in a large tupperware, and pour marinade over top. Cover and marinate overnight.
- Heat grill on Medium-High, discard marinade and sear meat on all sides. Turn grill to Medium-Low and cook until done. Allow meat to rest for 10 minutes and then slice.

You could definitely do this one in the oven. I would suggest searing the meat in a cast iron pan over Medium-High heat on the stove top and then popping it into a preheated oven at 450°F.
