Bananas Foster Cake

While watching Food Network recently we came across the most incredible looking dessert at Bradley Ogden’s restaurant in Las Vegas. Chocolate sauce, banana bread, bananas foster, & cream cheese ice cream. Hello gorgeous! Where have you been all my life?

W I recently threw my wife and her friends a Golden Globes party, it was the perfect fit. I merged a few different recipes together and came up with a pretty awesome tasting replica.
The sweet, flambéed bananas side by side with the cool cream cheese ice cream make for a devilishly good combination. Add in moist, delicious banana bread with a hint of chocolate, and this dessert is through the roof.

Bananas Foster Cake

Ingredients:
Cake:
 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
2 eggs
1/2 cup oil
3.5 bananas, ripe, mashed
2 tablespoons sour cream
1 teaspoon vanilla extract
Bananas Foster:
1 stick butter
1/2 cup brown sugar
4 bananas, ripe, peeled and sliced diagonally
1/4 cup dark rum
Additional:
1 pint vanilla ice cream
8oz package cream cheese
Whipped cream
Chocolate sauce
Preparation:
  1. Allow the ice cream and cream cheese to soften. Whip together until blended. Refreeze.
  2. For the banana bread: Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
In a medium bowl mix together the flour, baking soda, cinnamon and salt.
  3. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, sour cream, and vanilla. Fold in dry ingredients. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.
  4. For the bananas: Melt butter in a large skillet over Medium-High heat. Add brown sugar and stir together. Add the bananas and cook until caramelized.
  5. Pour in the rum and carefully catch a flame off of the gas stove or a BBQ lighter. Stand back when ignited and flambé. Let flame die down.
  6. Plate a smear of chocolate sauce; a slice of banana bread; topped with bananas and a dollop of whip cream alongside cream cheese ice cream.
