Artichokes

You know what’s sexy? Artichokes.

We’ve been eating them lately because they’re in season, and they’re easy. (And gluten-free – you’re welcome Martin!)
To prepare, just trim the pointy tips of the leaves, and trim the stem a little bit. Drop into a few inches of boiling water, and cook for about 20 – 30 minutes, depending on it’s size. (You should be able to pierce the stem with a knife easily.)  Allow to cool completely, and serve with a vinaigrette – some Dijon mustard, 2 tbsp red wine vinegar, and big squeeze of lemon, 3/4 cup olive oil, a little salt & pepper. You know… salad dressing.

Dip each leaf end of the artichoke in the vinaigrette and scrape the meat off with your teeth. Sounds perfectly inelegant, but it’s kinda glorious. Really. And even more so when you feed one to someone else. (Heh.)
Plus they’re good for you and totally count as a green vegetable. Yes, go feed one to someone. If you don’t have anyone to feed one to, just eat one anyway and say, Mmmmmmmmm… when you eat it. They’re yummy.
Artichokes are lovely.
Go get some.

    Kath, I totally know the dip you mean – I used to sell it when I had a business. Had to FORCE myself not to keep opening jars to “sample.” Delicious. And I make a good hot dip too… calls for canned artichokes. Sooooo freaking yummy…

    I must try that…I’ve only ever tried artichokes in dip. Have you tried that sinfully awesome artichoke asiago dip they sell at all the supermarkets? drool, drool…
