Ten years ago, when I brought my first born home from the hospital, my mother brought over the “hot” dessert of 1999….banoffee pie. A mix of caramel,bananas and coffee beans added up to a taste of heaven. It became a staple recipe in our family, but was a little labour intensive to be anything but a special dessert. Achieving the proper caramel consistency meant dedicated stirring of the condensed milk over a low heat for approximately 20 minutes straight. Starting with a graham cracker crust, it’s covered with a layers of dulce de leche, banana cream pie and whipped cream.
