How about:
pasta salad (bring dressing on the side to mix fresh at lunch).
sushi (my husband makes it himself)
wraps (bring filling on the side and spread atlunchtime if you have enough space)
mixed green salad with almonds (or other nuts) and bring cheese on the side to add to it
I think “on the side” is a great tip for lunches. Having small containers for soy sauce, salad dressing, etc. allows us to have more variety because we can pack things that would have gone soggy otherwise. Put them in a small ziploc bag (in case of leaks) – especially for kids lunches when they may not seal the containers completely after lunch.
