According to numerous studies, women prefer chocolate over…kissing and stuff.
But I say, why not have both? Why can’t there be a chocolaty treat that is fast and easy to prepare, sexy to eat, and doesn’t leave you feeling so full that you need to keep the Spanx on.
That is why for this Valentine’s day, in the small window of time between when my children (reluctantly) fall asleep and my husband and I (involuntarily) fall asleep, we will be enjoying a little Chocolate Love…and kissing and stuff.
Chocolate Love
Adapted from this recipe on the Mr. Christie’s Chocolate Wafer Box.
Ingredients
1 box chocolate wafer cookies
1 cup whipping cream
¼ cup finely chopped strawberries (frozen work well)
1 tbsp sugar (you can also use honey or maple syrup)
a few strawberries for garnish
Directions
1. Whip the cream; halfway through the whipping process, add in the chopped berries and sugar to give it a hint of sweetness and colour.
2. Assemble: place one cookie on a flat surface. Add about a tbsp of the whipped cream and then lightly squish another cookie on top of it. Repeat until you have 5-6 layers, ending with a cookie.
3. Using plastic wrap, carefully but tightly wrap the cylinder .
4. Make one more. Remember, this is dessert for two, ONLY! You will have a lot of extra whipped cream for garnish and…whatever.
5. Let rest in the fridge for at least 2 hours so that the wafers can soften up and become cake-like.
6. Serve: Unwrap and place upright on a plate. Garnish with a dollop of whipped cream and some berries.
