Fine, I admit it. My preschooler is not big on the vegetable. In fact, she’s a suuuuper picky eater. I wish I had started giving her whole-grain and whole wheat bread from the get-go, because unless her bread is white white white, she will NOT eat it.
(I will not make the same mistake with my son. Kelly Ripa once said, “I think children are like pancakes: You sort of ruin the first one, and you get better at it the second time around.” heh. She’s totally right!)
So, since I failed Zoe in the bread department, I refuse to fail her in the veggie department…which is why I sneak it into her food whenever I get the chance.
I do!
I add pureed zucchini into brownies and cakes.
I add mashed squash to muffins.
I add pureed veggies to meatballs and hamburgers.
I add grated sweet potatoes into pancake batter. (this one shocked even me!! Zoe devoured those pancakes!)
I add edamame to my macaroni and cheese.
I add mashed cauliflower to my mashed potatoes.
I add a spinach and cheese layer to my lasagna.
yes. I do. and I don’t feel bad about it.
BECAUSE MY DAUGHTER IS EATING VEGGIES!

Cauliflower is actually good in Mac n Cheese too. I love using pureed butternut squash in anything that uses cheese, chicken fajitas, quesadillas. It works REALLY well on my Husband! Muahahahahahaaaa!

A few of these may work with my daughter but if there is even a fleck of green or a hint of orange she won’t touch it! At least she eats whole wheat bread.
