Growing up, my daily veggie intake looked like this: three reluctant bites of iceberg lettuce, drenched in ranch dressing. On a good day.
I am determined to pump our kids full of fruits and veggies, knowing that it will be much easier for them to continue a healthy lifestyle if it starts early. Luckily we live in the Okanagan Valley, a land rich with apple and cherry orchards, farmers’ markets around every corner, and plenty of organic choices, so getting them to enjoy healthy produce has come more naturally for them than it did for me at their age.
I don’t deprive my kids of treats at all, but I do try to teach them about balance. Lately we’ve been making green smoothies as an after-school snack and they are always a huge hit.
Here’s my super-easy recipe:
1 banana
1/2 cup yogurt
1 cup frozen berries (we like raspberries, strawberries or blueberries)
1/2 cup milk (almond or soy works, or good ol’ straight-from-the-udder)
Then pack the space remaining in the blender with spinach.
Voila!
Don’t be scared of the greens! You can’t even really taste ’em.

oo! thanks for the recipe! we’ve been on a huge smoothie kick lately but i’m terrified to put greens in 😛 i have been using lots of berries, fruit in general, avocados and good ‘ol tofu (as well as a few other things) 🙂 do you use fresh or frozen spinach?
