I don’t know which brilliant person put meatballs in chicken soup… likely the same one that married chocolate & peanut butter or peas & carrots, but Italian Wedding Soup is one of my favourite foods because it combines two amazing dishes into one.
The only way I could see to improve this classic dish was to come up with a way to make it in the crockpot. The results were delicious. The rich flavourful soup is chock full of vegetables, chicken meatballs and pasta. How can you really go wrong?
Any other soups you want me to try and convert to the crockpot this winter? I’m on a roll..

Italian Wedding Soup
Serves: 4 – 6
Ingredients:
1 cup small sized pasta
Meatballs:
1/4 pound ground chicken
1/4 pound chicken or turkey sausage, casings removed
2/3 cup bread crumbs
2 cloves garlic, minced
3 tablespoons fresh Italian flat leaf parsley, chopped
2 large eggs, lightly beaten
Salt and pepper, to taste
Soup:
1 cup yellow onion, minced
3 carrots, diced
2 stalks celery, diced
10 cups chicken stock
1/2 cup dry white wine
1/4 cup fresh dill, minced
6 ounces baby spinach, washed and trimmed
Preparation:
- Place all soup ingredients in the crock pot.
- In a medium bowl combine the meatball ingredients. Shape the mixture into meatballs.
- Heat a frying pan over Medium-High heat. Add 2 tablespoons of vegetable oil and pan fry meatballs until browned, about 4 minutes.
Add the meatballs into the crock pot. - Cook on low for 8-10 hours.
Before serving prepare the pasta and add into the soup.

This soup sounds very tasty. I can suggest a way to make it even better by leaving the carrots in 2-3 larger pieces then when the soup is ready, remove the carrots, coarsely mash them, then return to the soup. Also, 2 eggs are too many for such a small amount of meat. Add only one egg, garlic powder instead of garlic cloves, and a little bit of grated romano cheese to the meat ball mixture. Absolutely divine!!

honestly, i’m just trying to figure out what is yummy in one. i got one as a prize and don’t really use it. this is one recipe i’ll definitely try…got any more up your sleeve?
