With the full onslaught of winter, I thought another crockpot recipe was in order. This soup
is a really comforting dish with great flavours and is hearty enough to serve as a main course. If you aren’t wild about lamb, feel free to substitute with stew beef. Also, if you’re making this for kids, they may prefer it before the lemon juice is added.

Lamb and Lentil Soup
Serves: 4 – 6
Ingredients:
1 large onion, chopped
1 clove garlic, minced
1 tablespoons olive oil
4 cups spinach, chopped
2 cups green lentils
2 lamb shanks or 3 small lamb shoulder steaks
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
8 cups beef broth
1/4 cup fresh lemon juice
1 clove garlic, minced
1 tablespoons olive oil
4 cups spinach, chopped
2 cups green lentils
2 lamb shanks or 3 small lamb shoulder steaks
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
8 cups beef broth
1/4 cup fresh lemon juice
Preparation:
- In a crockpot combine onion, garlic, greens lentils, spinach, lamb shanks, salt, pepper, and broth.
Cover and cook on low for 8 to 10 hours. - Add lemon juice, adjust seasonings, and serve. Lamb may be served on the side or remove meat from bones, dice and return to soup.
