This tasty dessert treat is whipped together so simply. The flaky pastry dough is filled with a deliciously sweet cheese filling. I usually make them in larger batches and make a bunch at one time. The danishes will disappear as quick as you can put them out, and your guests will have trouble believing you made them yourself at home.

Easy-peasy Lemon-squeezy Cheese Danish
Serves: 4
Ingredients:
8 ounces cream cheese, room temperature
1/3 cup sugar
2 large egg yolks, room temperature
2 tablespoons ricotta cheese
1 teaspooon vanilla extract
1/4 teaspoon salt
1 tablespoon freshly squeezed lemon juice
2 sheets puff pastry, defrosted
1 egg, beaten with 1 tablespoon water
Preparation:
- Preheat the oven to 400 degrees F. Line a cookie sheet with parchment paper.
- Place the cream cheese and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix together on low setting until smooth.
- With the mixer on low, add the egg yolks, ricotta, vanilla, salt, and lemon juice. Mix until combined (not whipped).
- Unfold one sheet of puff pastry onto a floured surface and roll with a rolling pin to form a 10×10 ich square. Cut the sheet into quarters with a sharp knife.
- Place a heaping tablespoon of cheese filling into the middle of each square. Brush the border with egg wash and fold a corner over to its opposite corner, forming a triangle.
- Brush the top of the pastries with egg wash. Place them on the prepared sheet pan, and repeat with the second sheet of puff pastry. Refrigerate for 15 minutes.
- Bake the pastries until puffed and brown, about 20 minutes. Rotating the pan once.
