Welcome to Chef Dad! I guess it’s no secret I like to cook and I’m a dad to 3 awesome kids. There’s nothing better than making dinner that all three kids love. It’s not an every day feat – but it’s certainly the goal.
My kids are awesome supporters of me in the kitchen. There is rarely something I whip together that they won’t at least try – what more can you ask for?
For the inaugural Chef Dad post, I thought it would only be appropriate to put up my absolutely favourite recipe for all of you. In fact, it’s not just the favourite thing I make, it’s the best thing I’ve ever eaten. Hands down.

Died & Gone to Heaven Beef Ribs
Serves: 4
Ingredients:
2 full slabs beef ribs
1/2 cup honey
1 cup premium apple juice
1 1/2 cups quality bbq sauce*
Dry Rub**
3/4 cup salt
1/4 cup seasoned salt
1 cup Sugar in the Raw
1/2 cup granulated brown sugar
1/2 cup chili powder
2 tablespoons coarse ground black pepper
1/2 tablespoon cayenne pepper
1 teaspoon ground sage
1 teaspoon ground thyme
* this recipe is all about the sauce. It has to be lip smackin’ good. These days I’m really digging this and this.
** the dry rub recipe will make much more than you’ll need. That’s ok, you’ll want to make these often. Simply store in a tupperware in your spice cabinet. It’ll last you the whole season.
Preparation:
- Tim the ribs. Rub each rack liberally with dry rub.
- Preheat grill on Low for indirect heat. Place the ribs away from the heat source and cook until the ribs are just caramelized, about 2 hours, flipping every 30 minutes.
- Preheat oven to 325 degrees F. Dump the ribs in a large foil pan with apple juice. Glaze with honey, and cover with foil. Place in oven for one hour.
- Preheat the grill to High for direct cooking. Throw the ribs back on the grill to sear, about 2 minutes per side.
- Remove ribs from grill, cut into individual portions, brush liberally with bbq sauce. Enjoy!
